Easter baking

Easter bunny

Easter baking means one thing and one thing only, chocolate!! Here are our fave chocolate Easter treats.

Easter nests

Super simple and the epitome of Easter, they couldn’t be easier!

Melt butter, golden syrup and chocolate in a bowl over a saucepan of simmering water until runny.

In another bowl, scrunch up shredded wheat until it forms straw. Then, mix until all the shredded wheat is coated.

Lay out paper cases, use pastel colours for Easter and fill each case with a big spoonful of the mix, pressing down the middle, so it looks like a nest.

Place three small eggs of your choice in the indentation.  We love mini eggs for their colour, but you can use any chocolate egg you wish.  Leave to harden, then enjoy.

You can make this just with chocolate, if you don’t want to add the syrup or butter, or use dairy free chocolate if you wish.

Chocolate truffle lollipops

Who doesn’t love chocolate, on a stick?  You’ll need:

  • Lolly sticks
  • 300g chocolate
  • 300ml double cream
  • 50g butter
  • Sprinkles of your choice.

Melt the butter and double cream together until the butter is melted and the cream is just reaching simmering point.

While this is happening break the chocolate into small pieces.  Dark or milk work well.

Pour the hot butter and cream onto the chocolate and stir with a wooden spoon until combined.  Leave to cool and place in the fridge.

Once cold, use a melon baller or teaspoon to take out small balls.  Roll into a ball and insert your lolly stick (the small ones are best).

Then, roll your truffle in any toppings from coco powder to sprinkles or nuts.  You can even spray them with edible glitter!

For a great display, make a dome of tin foil and stick the chocolate truffle lollies into it.

Hot chocolate bunnies

This is a great fun drink.  Chop up a mix of dark and milk chocolate.

Warm a mix of milk with a splash of cream until simmering and pour over the chocolate, whisk until smooth and liquid.

Pour into large rounded mugs.

Take two giant marshmallows and place on the top of each hot chocolate.

Then take two matchmakers, or other stick-like chocolate treat and place a small marshmallow either side.

If you want to make them stick, heat them slightly and squish together either side to hold the chocolate whiskers together. Place on top of the hot chocolate. Voilà – yummy chocolate with bunnies.
