Yummy (but healthy) summer desserts

I’m hoping that when you read this blog the weather has improved and we are finally having some much-needed sunshine.  If not, then hopefully these yummy summer desserts will make it feel like summer has begun.

Smoothie ice pops

This is a great way to get the kids to eat their 5-a-day, keep them cool and they make a great treat.


Simply make your smoothie (berries and a banana are great) and add in some natural yogurt.  If the berries aren’t that sweet you can add some honey as well.


Once you’re happy with your smoothie, simply pour into lolly moulds and freeze.

Banana boats

These are great done on the barbeque or an open fire.  You’ll need bananas, chocolate buttons and tin foil.  Simply cut a slit in the banana (keeping it in its skin) and fill the slit with a few chocolate buttons.  Then wrap the tin foil around the banana and place on the barbeque for a few minutes on each side.  Unwrap and enjoy with a splodge of natural yogurt or cream.

Yogurt drops

These make a great snack to keep in the freezer and perfect for adding as sprinkles to deserts well.


You’ll need different fruit yogurts and greaseproof paper.  Take the greaseproof paper and lay it out on a tray. Then dollop on circles of yogurt onto the paper. Place the tray into the freezer to flash freeze the individual disks. Once frozen place the disks into zip lock bags and then bring out when ready.

Blueberry pancakes

These are great for breakfast and you can add in loads of the ‘superfood’ blueberries.  First, make your pancake batter, you need the thick American kind, then add the blueberries.


For added ‘blueberryness’, make a blueberry compote with a small amount of sugar or organic natural sweetener and heat the blueberries until they burst and soften. Pour the compote over the pancakes and fresh blueberries and enjoy.
